Kathryn Marchak Explores Food as Health as NourishedRx Summer Intern

Kathryn Marchak, a student in the class of 2028 at the University of Connecticut’s College of Agriculture, Health and Natural Resources, spent her summer diving deep into the intersection of medicine and nutrition. Through a paid internship with NourishedRx, a platform dedicated to personalized, data-driven nutritional plans, Marchak explored the philosophy that food is health. She believes that proper nutrition provides the essential building blocks the body requires to heal and perform at its peak, a conviction that drove her work throughout the season.

The opportunity came about through a partnership between the college’s Dean’s Advisory Board and NourishedRx founder and CEO Lauren Driscoll. Marchak began her remote tenure focusing on community outreach, helping new users enroll in the program and re-engaging silent members who had signed up but stopped communicating with the team. Her ability to quickly master complex systems allowed her to take on these responsibilities early in her internship, making an immediate impact on one of the company’s largest outreach initiatives.

As the summer progressed, Marchak shifted her focus toward clinical application. She shadowed health coaches during patient consultations and collaborated with registered dietitians. One of her most significant contributions involved revamping maternal health education materials, where Driscoll noted that Marchak brought both creativity and a sharp eye for detail to the project. This hands-on experience gave her a front row seat to how dietary guidance integrates with broader medical care.

Reflecting on her time with NourishedRx, Marchak realized that positive health outcomes depend on far more than what happens inside a doctor’s office. She observed that factors such as food access and social support often dictate whether a patient can successfully follow a treatment plan. For Marchak, the experience reinforced a vital lesson for any future healthcare provider: true wellness begins with understanding a person’s life outside of the clinic walls.
